Healthy Baked Artichokes with Garlic Dipping Sauce

Ingredients

For the Artichokes

  • 1 tablespoon Olive oil extra virgin
  • 1/2 teaspoon red pepper flakes
  • 1 can artichoke hearts drained, rinsed and dried
  • 1/4 cup parmesan cheese grated

For the Garlic Dipping Sauce

  • 1/4 cup Mayonnaise
  • 2 garlic cloves minced
  • 1/4 cup sour cream
  • 1 tablespoon lemon juice
  • 2 tablespoons dijon mustard
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon cajun seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • Drain artichoke hearts and rinse with cool water. Dry with a paper towel.

  • In a large bowl, toss artichoke hearts with olive oil, red pepper flakes and parmesan cheese. Making sure to coat each one well.

  • Spread on a parchment lined baking sheet. Bake at 400 degrees for 15-20 minutes or until they are crispy and golden brown. 
  • For the Sauce, in a medium size bowl, mix the mayo, sour cream, minced garlic, lemon juice, mustard, Worcestershire sauce, Cajun seasoning, salt and pepper well. 
    1/4 cup Mayonnaise, 2 garlic cloves, 1/4 cup sour cream, 1 tablespoon lemon juice, 2 tablespoons dijon mustard, 1/2 teaspoon Worcestershire sauce, 1/2 teaspoon cajun seasoning, 1/4 teaspoon salt, 1/4 teaspoon pepper
  • Cover and refrigerate until ready to serve.
