Easy Sweet Potato Casserole

Ingredients

  • For the Casserole
  • 3 cups sweet potatoes mashed and cooked
  • 1 cup sugar
  • 2 eggs beaten
  • 1/2 cup butter melted
  • 1 teaspoon vanilla
  • 1/3 cup milk
  • For the Topping
  • 1 cup brown sugar
  • 1/2 cup self rising flour
  • 1 cup chopped pecans
  • 1/2 cup butter melted
  • 1 pinch salt

Instructions

  • Preheat the oven to 350 degrees Fahrenheit. In a large bowl, mix sweet potatoes, sugar, eggs, butter, milk and vanilla well.

  • In a small bowl, mix brown sugar, flour, pecans, butter and salt well. Mixture will be crumbly
    1 cup brown sugar, 1/2 cup self rising flour, 1 cup chopped pecans, 1/2 cup butter, 1 pinch salt
  • Prepare a 9x13 baking dish with butter or cooking spray. Pour casserole mixture in casserole dish. Sprinkle topping mixture evenly on top.
  • Bake at 350 degrees for 25-35 minutes. For a candy like crust on top, place under the broiler on medium to high for just a few minutes. Leaving the oven door open and watching so it doesn't burn. Let it sit for 5-10 minutes before serving. Enjoy!
