Easy Low Carb No Bake Peanut Butter Cookies

Ingredients

  • 1 cup natural peanut butter
  • 1/2 cup salted butter softened
  • 1/2 cup swerve granulated
  • 1 tablespoon avocado oil
  • 2 cups almond flour
  • 1 teaspoon vanilla extract
  • 1 cup peanuts crushed

Instructions

  • In a mixing bowl, combine the peanut butter, butter, sugar substitute, avocado oil, almond flour and vanilla. Mix well.

  • Chill in refrigerator for 30 minutes.
  • Remove from the refrigerator and use a scoop to take out and roll in individual balls. Roll balls in crushed peanuts and place on a sheet pan lined with parchment. Press each ball down to desired cookie thickness.
    1 cup peanuts
  • Return pan to refrigerator and chill for 30 minutes to overnight.
