Crock Pot Southern Black Eyed Peas

Ingredients

  • 1 teaspoon olive oil
  • 1/2 package bacon chopped
  • 2/3 cup onion chopped
  • 2 jalapeno peppers seeded and chopped
  • 2 tablespoons garlic fresh, minced
  • 2 cups dried black eyed peas
  • 2 cups chicken broth
  • 2 cups beef broth
  • 1 can diced tomatoes undrained
  • 1 teaspoon dried oregano
  • 1/4 teaspoon cajun seasoning
  • 1/4 teaspoon black pepper

Instructions

  • In a large skillet, heat olive oil. Brown onions, jalapeños, bacon and minced garlic over low to medium heat 8 to 10 minutes. Just until veggies are soft and fat has cooked out of bacon. Set aside.

  • In the liner of a crock pot, add the black eyed peas, chicken broth, beef broth and diced tomatoes. Season with oregano, black pepper and cajun seasoning. Mix well.

  • Pour in bacon and onion mixture, drippings and all. Mix well. Place the lid on and cook on low for 8 hours or high for 5 to 6. Just until black eyed peas reach your desired done-ness.
