Bourbon Steak with Brussels and Sweet Potatoes

Ingredients

  • 1 pound steak your choice
  • 1 pound brussel sprouts trimmed and halved
  • 2 large sweet potatoes peeled and cut into bite size cubes
  • 1/2 cup red onion chopped
  • 1.5 teaspoons pepper
  • 1 tablespoon fresh rosemary minced
  • 2 tablespoons brown sugar
  • 1.5 teaspoons salt
  • 2 tablespoons olive oil
  • 1 tablespoons garlic minced
  • 2 tablespoons bourbon
  • 1 tablespoon prepared horseradish
  • 2 tablespoons whole grain mustard
  • 1 teaspoon smoked paprika

Instructions

  • Preheat oven to 425 degrees F. In a large bowl, mix sweet potatoes, Brussels, onion, salt, pepper, rosemary, paprika and olive oil. Spread on a sheet pan in a single layer and bake for 20 minutes.

  • While vegetables are baking. Pierce steak with a fork on both sides. In a medium bowl, mix bourbon, brown sugar, garlic, mustard and horseradish to combine. Pour over steak and massage in and set aside.

  • When vegetables are done, spread to each end of sheet pan and place steak in the middle. Bake another 20 minutes, turning the steak halfway through cooking time.
  • Allow meat to rest for 5-10 minutes, slice and serve. Enjoy!
