Bacon Wrapped Onion Meatball Bombs

Bacon Wrapped Onion Meatball Bombs are a great addition to any BBQ. Delicious hamburgers wrapped in onion shells and hugged by smoky strips of bacon! Deeeelicious!

Ingredients

  • 2-4 Small Yellow or White Onions
  • 1 pound Ground Beef
  • ½ cup breadcrumbs
  • 1 egg
  • salt to taste
  • pepper to taste
  • ½ cup shredded cheddar cheese
  • 12oz package Bacon
  • ½ cup BBQ sauce
  • chives or green onions for garnish

Instructions

  • Preheat oven to 425 degrees
  • Mix Ground beef, egg, breadcrumbs, cheese, salt and pepper in a large bowl. Mix until well combined
  • Carefully cut ends off of each onion and split each onion diagonally. Carefully remove the outer 2-3 layers of the onion taking care not to break them. Separate the layers for the outer shell of the bomb.
  • Take enough meat mixture and form a ball to fit inside the two halves of onion, just until seams slightly meet.
  • Wrap each onion with 1-3 pieces of bacon. I like to cross hatch two over the top and wrap another around the side. Can secure with a toothpick if needed.
  • Place on a rack in sheet pan or foil lined sheet pan. Bake at 425 for 45 minutes or until internal temperature is 165 degrees.
  • Remove from oven and baste with your favorite BBQ sauce and bake for 5 minutes more. Allow to rest for 10-15 minutes, serve and Enjoy!
