Bacon Wrapped Asparagus

Ingredients

  • 1 medium bundle of fresh asparagus trimmed
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ cup grated parmesan cheese
  • ¼ teaspoon pepper
  • 2 tablespoons balsamic vinegar

Instructions

  • Preheat oven to 400 degrees Fahrenheit. Cut bacon slices in half. Trim woody ends from asparagus and place in a single layer on a baking sheet. Drizzle with olive oil. Take one halved slice of bacon and wrap a bundle of 3 asparagus with the bacon in the center.
  • Lay seam side down on a baking sheet.
  • Once all bundles are assembled, sprinkle with salt, pepper and Parmesan Cheese. Drizzle balsamic vinegar over each bundles.
  • Bake at 400 degrees for 15 minutes. Remove from oven and turn each bundle over. Return to oven and bake another 15-20 minutes until bacon is crisp and asparagus is dark green and wilted. Allow to cool slightly before serving.
