Redneck Caviar

Redneck Caviar also known as Cowboy Caviar, is a spicy blend of fresh flavors sure to be a hit at any gathering. Peas, beans and fresh veggies marinated in spicy Italian dressing are a fresh burst of flavor. Always a big hit at any party!

Ingredients

  • 14 oz can black eyed peas drained and rinsed
  • 14oz can black beans drained and rinsed
  • 14oz can diced tomatoes
  • 14oz can sweet yellow corn drained
  • ½ cup chopped Red onion
  • 1 Bell Pepper seeded and diced
  • 4oz can green chilis
  • 4oz can sliced black olives drained
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • 16oz bottle of prepared Italian Dressing

Instructions

  • In a large bowl with a lid, mix all ingredients well.
  • Cover and refrigerate at least 2 hours. Best to allow to marinate overnight for flavors to meld.
  • Serve with tortilla chips and watch it disappear! Enjoy!
