Mexican Unstuffed Cabbage

Mexican Unstuffed Cabbage adds Chorizo, but you still have the staples of beef, bell pepper, tomatoes and all of those glorious spices. A great one pot meal that your whole family will love.

Ingredients

  • 1 pound ground beef
  • 9 oz Chorizo Beef sausage
  • ½ cup chopped onion
  • 1 Bell pepper chopped
  • 2 tablespoons minced garlic
  • 14 oz can diced tomatoes
  • ½ teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon dried oregano
  • 1 teaspoon pepper
  • 1 medium head of cabbage chopped
  • 2 cups Shredded Mozzarella cheese

Instructions

  • In a large Dutch oven, saute ground beef, chorizo, onion, bell pepper and salt and pepper until browned. Add garlic and cook for one minute. Drain and return to dutch oven.
  • Add diced tomatoes, seasonings and mix well. Put chopped cabbage on top of meat mixture. Cover and cook on low heat for 30 minutes, stirring often. Turn off heat.
  • Sprinkle with mozzarella cheese and cover for 5-10 minutes to allow for cheese to melt. Enjoy!
