Spaghetti Squash Gratin

Ingredients

  • 3 cups Spaghetti Squash cooked and seperated
  • 2 eggs
  • 1 cup Mozzarella Cheese shredded
  • 1/2 cup Plain Greek Yogurt
  • 2 tablespoons Minced Garlic
  • 1/2 teaspoon dried thyme
  • Salt to taste
  • Pepper to taste
  • 1/2 cup Parmesan Cheese grated

Instructions

  • Preheat oven to 400.
  • In a large bowl, mix prepared, cooled squash with eggs, cheese and greek yogurt. Mixing well.
    3 cups Spaghetti Squash, 2 eggs, 1 cup Mozzarella Cheese, 1/2 cup Plain Greek Yogurt
  • Season with salt, pepper, garlic and thyme. Mix well.Pour in a lightly greased casserole dish. Top with parmesan cheese.
    2 tablespoons Minced Garlic, 1/2 teaspoon dried thyme, Salt, Pepper, 1/2 cup Parmesan Cheese
  • Bake for 30 minutes, until top is slightly browned. Allow to rest for 10 minutes.Serve and enjoy!
