Southern Tomato Gravy

Ingredients

  • 1 tablespoon butter
  • 2 tablespoons bacon grease
  • 1.5 cups onion chopped
  • 2 tablespoons plain flour
  • 1.125 teaspoons salt
  • 1.125 teaspoons pepper
  • 14 ounces can diced tomatoes
  • 2 cups tomato juice
  • 6 slices bacon cooked bacon, optional

Instructions

  • Heat bacon grease and butter in a large Skillet over medium heat. Add onions t cook until soft. 1-2 minutes.
    1 tablespoon butter, 2 tablespoons bacon grease, 1.5 cups onion
  • Add flour, salt & pepper mix until soft ball or paste forms. Cook for I minute stirring.
    2 tablespoons plain flour, 1.125 teaspoons salt, 1.125 teaspoons pepper
  • Gradually add tomatoes & tomato juice. Boil at medium heat a whisk to combine. Lower heat to low & cook about 10 minutes or until thickens. Serve over biscuits and sprinkle with cooked bacon.
