Southern Shrimp and Veggie Pasta Salad

Ingredients

  • 3 tablespoons salt divided plus a little more
  • 12 ounces pasta uncooked
  • 1 pound raw shrimp peeled, deveined and tail off
  • 1/4 cup lemon juice
  • 1 tablespoon dijon mustard
  • 1 tablespoon honey
  • 1 cup olive oil
  • 1 tablespoon garlic minced
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon black pepper
  • 2 cups sugar snap peas fresh
  • 1/2 cup red onion thinly diced
  • 1/2 cup celery thinly diced
  • 3 tablespoons Old Bay Seasoning plus a bit more

Instructions

  • Bring a large pot of water to boil with about 3 tablespoons of salt. Once boiling, cook pasta according to package directions just to al dente. Drain, reserving pasta water. Set aside.

  • Add 3 tablespoons Old Bay seasoning to pasta water and return to a boil. Once boiling, add shrimp and allow to cook for 2 to 3 minutes, just until pink. Place drained shrimp in an ice bath to cool.

  • In another bowl, mix lemon juice, mustard and honey. Mix well. Use a whisk and drizzle olive oil in to emulsify.

  • Add in minced garlic, red pepper flakes, black pepper, 1/4 tsp of salt and about 1/2 tsp of old bay seasoning. Mix well and set dressing aside.

  • In a large serving bowl, add pasta, shrimp, sugar snap peas, celery and onion. Fold to combine. Drizzle over with dressing and gently mix. Making sure dressing coats all ingredients. Refrigerate for at least 30 minutes to overnight. Serve and enjoy.
