Cook pasta according to package directions. Drain and set aside.
2 cups rotini pasta
Slice sausage and brown in a large Skillet. Remove and drain.
1 pound smoked Conecuh sausage
Place butter in the same Skillet over medium to low heat. Once melted, add flour and cook for 1 to 2 minutes. Slowly add in half an half and whisk until thickened.
1 and 1/2 Cup half and half, 1 tablespoon plain flour, 2 tablespoons butter
Lower heat and add sausage, tomatoes, both cheeses and seasonings. Add cooked and drained pasta back to pan. Heat through for a minute and remove. from heat.
1/2 cup shredded mozzarella cheese, 1/2 cup shredded Cheddar cheese, 1/2 teaspoon salt, 1/4 teaspoon pepper, pinch of red pepper flakes, 1 can diced tomatoes
