Italian Tortellini Salad

Ingredients

  • 3 cups green leaf lettuce
  • 1 cup cherry tomatoes halved
  • 1/2 cup pepperoni chopped
  • 1/2 cup salami chopped
  • 1/4 cup Red Onion chopped
  • 1 pound frozen cheese tortellini cooked to package directions
  • 1/4 cup parmesan cheese shaved or grated
  • 1/4 cup mozzarella cheese shredded
  • 2 tablespoons basil chopped
  • 2 tablespoons white wine vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon garlic chopped or minced
  • 1/2 teaspoon Salt
  • 1/2 cup olive oil
  • 1/2 teaspoon Pepper

Instructions

  • Cook pasta according to package directions. Drain and cool.
    1 pound frozen cheese tortellini
  • Chop lettuce, tomatoes, pepperoni, salami, basil and onion. Combine in a large bowl with pasta and toss.

  • In a small bow, mix white wine vinegar, lemon juice, garlic, salt, pepper and olive oil well for dressing.Pour over salad and toss until allis covered.
