Ham and Cheese Grits Casserole

Ingredients

  • 2 green onions chopped
  • 1.5 cups broth
  • 2 eggs or 1/2 cup liquid egg whites
  • 1.5 cups water
  • 1 cup cheddar cheese shredded
  • 1/4 cup milk
  • 1 cup grits uncooked
  • 2 tablespoons butter
  • 1 cup ham cubed and cooked
  • salt & pepper to taste
  • 1/4 teaspoon garlic
  • 1/8 teaspoon red pepper flakes

Instructions

  • Preheat oven to 350 .
  • Boil water and broth in large boiler. Stir in grits & reduce heat to low. Cover a cook 5 to 10 minutes, until thick.
    1.5 cups broth, 1.5 cups water, 1 cup grits
  • In a separate bowl, lightly beat eggs and temper with warm grits. add all eggs, add 1/2 cup of cheese, milk & butter.
    2 eggs, 1 cup cheddar cheese, 1/4 cup milk, 2 tablespoons butter
  • Mix well. Add salt, pepper, garlic and red pepper. Fold in onions and ham. Pour in a greased 9 x11 casserole dish. Top with remaining cheese. Bale 35 to 45 minutes.

  • Cool for at least 10 minutes, serve and enjoy!
