Christmas Eve Shortbread Cookies

Ingredients

  • 2 cups unsalted butter
  • 1/3 tablespoon vanilla
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 1/2 cup brown sugar
  • 4.33 cups plain flour divided
  • sprinkles or decorations of choice

Instructions

  • Mix Brown sugar, white sugar, vanilla, salt and butter in a stand mixer or with hand mixer until combined and somewhat creamy. Mix in 3 and 1/2 cups of the flour just until combined. Reserve the remaining cup of flour for kneading and rolling out cookies.
    2 cups unsalted butter, 1/3 tablespoon vanilla, 1/2 cup sugar, 1/2 cup brown sugar, 4.33 cups plain flour, 1 teaspoon salt
  • Knead the dough by hand for 5 minutes using the flour as sparingly as you can. Divide the dough into thirds and wrap in plastic wrap and refrigerate to rest for 30 minutes.

  • Preheat oven to 325 degrees Fahrenheit. On a floured surface, roll out one third section of the dough to about a 1/2 an inch. Cut cookies, decorate and place 2 inches apart on a baking sheet lined with parchment or a silicone pad. if using a bare baking sheet there is no need to spray with cooking spray. Bake for 15-20 minutes. Cool on a wire rack.

  • Can use all 3 sections of dough or freeze by wrapping well for up to a month. Thaw frozen dough on the countertop at room temperature. Roll out, decorate, cut and cook as stated above. Enjoy!
