Candied Sweet Potato Bites

Ingredients

  • 4 medium sweet potatoes peeled and sliced into discs

  • 2 tablespoons

    maple syrup


  • 2 tablespoons butter

    melted


  • 1 tablespoon

    brown sugar


  • candied pecan halves


  • cinnamon

    for garnish


  • whipped cream


  • pinch salt

Instructions

  • Preheat the oven to 400 degrees. Peel and slice potatoes into wedges.
    4 medium sweet potatoes
  • Line a baking sheet with wax or parchment paper and place potatoes on the baking sheet.
  • Melt butter and mix with maple syrup and brown sugar. Glaze the sweet potatoes with the mixture, turn over and do the other side.

  • Bake for 10 minutes, remove from oven and carefully turn over and glaze tops again. Return to oven for another 15 minutes. In order to keep them from sticking, move them to a serving platter while still hot.
  • Sprinkle with just a pinch of salt. Allow to cool slightly and top with a dollop of whipped cream and a candied pecan. Sprinkle or use a grater to add just a touch of cinnamon for garnish on top of the whipped cream.

**NOTE: You can always mix some chopped pecans with a little brown sugar and butter like you would for a topping for a crumb cake and that will work just as well.
