Baked BLT Avocados

Ingredients

  • 2 avocados halved and seeded
  • 4 slices bacon cooked and crumbled
  • 1/2 cup grape tomatoes halved
  • 1 teaspoon lime juice
  • 1/2 cup green leaf lettuce chopped
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt divided
  • 1/8` teaspoon pepper
  • 1 tablespoon olive oil

Instructions

  • Preheat oven to 350 degrees. Carefully cut the avocados in half and remove the seed. With a spoon, scoop out half of the flesh of the avocados and place in a bowl. Drizzle avocado boats with olive oil and sprinkle with 1/4 teaspoon of the salt. Bake for 10-20 minutes until remaining flesh is soft and browned.
    2 avocados, 1 tablespoon olive oil, 1/2 teaspoon salt
  • In a separate bowl, mix the scooped avocado with bacon, tomatoes, lettuce, remaining salt, garlic, pepper and lime juice.
    4 slices bacon, 1/2 cup grape tomatoes, 1 teaspoon lime juice, 1/2 cup green leaf lettuce, 1/4 teaspoon garlic powder, 1/8` teaspoon pepper, 1/2 teaspoon salt
  • When avocados are done. Spoon BLT mixture into each avocado boat. Enjoy!
