Preheat oven to 350 degrees. Carefully cut the avocados in half and remove the seed. With a spoon, scoop out half of the flesh of the avocados and place in a bowl. Drizzle avocado boats with olive oil and sprinkle with 1/4 teaspoon of the salt. Bake for 10-20 minutes until remaining flesh is soft and browned.
2 avocados, 1 tablespoon olive oil, 1/2 teaspoon salt
In a separate bowl, mix the scooped avocado with bacon, tomatoes, lettuce, remaining salt, garlic, pepper and lime juice.
4 slices bacon, 1/2 cup grape tomatoes, 1 teaspoon lime juice, 1/2 cup green leaf lettuce, 1/4 teaspoon garlic powder, 1/8` teaspoon pepper, 1/2 teaspoon salt
When avocados are done. Spoon BLT mixture into each avocado boat. Enjoy!
If you find your avocados for this are not ripe enough, increase the cook time to 20 minutes and scoop the flesh for the BLT mixture after baking.
