Bacon and Black Eyed Pea Salad

Ingredients

  • 1 tablespoon dijon mustard
  • 2 tablespoons minced garlic
  • salt to taste
  • pepper to taste
  • 1/4 teaspoon cayenne pepper
  • 3 tablespoons olive oil
  • 1.5 tablespoons lemon juice
  • 14 ounces black eyed peas can, drained and rinsed
  • 6 slices bacon cooked, cooled and crumbled
  • 1/2 cup red onion chopped
  • 1/4 cup celery chopped
  • 1/2 cup bell pepper chopped
  • 2 tablespoons dried parsley

Instructions

  • Drain and rinse black eyed peas. In a small bowl, combine first 7 ingredients and whisk to combine or shake in a shaker bottle.
    1 tablespoon dijon mustard, 2 tablespoons minced garlic, salt, pepper, 1/4 teaspoon cayenne pepper, 3 tablespoons olive oil, 14 ounces black eyed peas, 1.5 tablespoons lemon juice
  • In a large bowl, add peas, onion, celery, bell pepper, bacon and parsley. Mix well. Pour dressing over peas and veggies and mix well. Cover and refrigerate until ready to serve.
    6 slices bacon, 1/2 cup red onion, 1/4 cup celery, 1/2 cup bell pepper, 2 tablespoons dried parsley
  • Serve and enjoy!
