Italian Tortellini Salad is filled with the fresh salad ingredients and Italian meats. We top it off with cheese tortellini and a great dressing!

Ingredients

  • 3 cups green leaf lettuce
  • 1 cup cherry tomatoes halved
  • ½ cup pepperoni chopped
  • ½ cup salami chopped
  • ¼ cup Red Onion chopped
  • 1 pound frozen cheese tortellini cooked to package directions
  • ¼ cup parmesan cheese shaved or grated
  • ¼ cup mozzarella cheese shredded
  • 2 tablespoon basil chopped
  • 2 tablespoon white wine vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon garlic chopped or minced
  • ½ teaspoon Salt
  • ½ cup olive oil
  • ½ teaspoon Pepper

Instructions

  • Cook pasta according to package directions. Drain and cool.
  • Chop lettuce, tomatoes, pepperoni, salami, basil and onion. Combine in a large bowl with pasta and toss.
  • In a small bow, mix white wine vinegar, lemon juice, garlic, salt, pepper and olive oil well for dressing.Pour over salad and toss until allis covered.
