These Red Velvet Cake Mix Cookies are easy and delicious. The deep, rich flavor of red velvet takes on a new twist in a crispy but soft centered cookie.

Ingredients

  • 8 oz cream cheese softened
  • ½ cup butter softened
  • 1 egg
  • 1 teaspoon vanilla
  • 1 box red velvet cake mix
  • ½ cup confectioners or powdered sugar

Instructions

  • Preheat the oven to 350 degrees.
  • Cream butter and cream cheese together until light and fluffy. Add in egg and vanilla and mix
    well. Add in Red Velvet cake mix in 2 small batches and mix well until all
    incorporated.
  • ·  Scoop out tablespoon size amounts of dough and shape into small balls. Roll Balls in confectioners
    sugar to coat. Place on a greased sheet pan or one with parchment.
  • Bake at 350 degrees for 12-13 minutes. Cool on wire rack and sprinkle with a little more confectioners sugar.
