Pecan Brittle

Pecan Brittle is an easy candy you can whip up anytime. We love a Holiday treat but this Brittle is simple enough to do anytime.

Ingredients

  • 1 cup sugar
  • ½ cup light Karo Syrup
  • 1 and ½ cup Pecan halves chopped
  • 1 tablespoon Butter
  • 1 teaspoon Vanilla extract
  • 1 teaspoon baking soda

Instructions

  • Line a baking sheet with Foil or a silicone mat. Stay liberally with non stick cooking spray. Also prep a spatula by spraying it with non stick cooking spray. Set aside.
  • In a large microwave safe bowl, combine sugar and syrup. Microwave on high for 3 minutes. Mix well and add pecans. Microwave another 3 minutes. Remove carefully and stir well.
  • Add butter and vanilla and stir well. Microwave once more for one minute and mixture should be boiling a little. Carefully remove and add baking soda. Mix well and be sure to notice that mixture should foam up a bit and change color.Pour onto the silicone or foil lined pan and spread with the sprayed spatula.
  • Set aside and allow to cool until it hardens. Break into pieces and store in an airtight container. Enjoy!
