Pecan Brittle is an easy candy you can whip up anytime. We love a Holiday treat but this Brittle is simple enough to do anytime.

Ingredients
1cupsugar
½cuplight Karo Syrup
1and ½ cup Pecan halveschopped
1tablespoonButter
1teaspoonVanilla extract
1teaspoonbaking soda
Instructions
Line a baking sheet with Foil or a silicone mat. Stay liberally with non stick cooking spray. Also prep a spatula by spraying it with non stick cooking spray. Set aside.
In a large microwave safe bowl, combine sugar and syrup. Microwave on high for 3 minutes. Mix well and add pecans. Microwave another 3 minutes. Remove carefully and stir well.
Add butter and vanilla and stir well. Microwave once more for one minute and mixture should be boiling a little. Carefully remove and add baking soda. Mix well and be sure to notice that mixture should foam up a bit and change color.Pour onto the silicone or foil lined pan and spread with the sprayed spatula.
Set aside and allow to cool until it hardens. Break into pieces and store in an airtight container. Enjoy!
