Ingredients
3cupssteamed broccoli
⅓Cupbutterdivided
1cuppanko bread crumbs
I cup cheddar cheesedivided
1cupmozzarella cheese
3cupsbeef broth
2cupsmilk
I cup chopped onion
½cupchopped celery
½cupmushrooms
salt and pepper to taste
2tablespoonsminced garlic
¼Cupflour
I and ½ cup quick brown rice
½cupsour cream
½cupmayonnaise
Instructions
Preheat oven to 350 degrees. Melt 2 tablespoon butter and mix with panko bread crumbs and ½ cup of each cheese.Set Aside.
Simmer broth and milk over medium heat. after bringing to a boil reduce to low heat. keep warm.
Melt remainder of butter in a dutch oven. Cook celery and onion until soft. Add mushrooms, salt and pepper. Cook until tender. Add garlic and flour. Cook I minute. add broth/milk mixture and cheese. Mix well.
Add rice, sour cream and mayonnaise. Cover and cook for 20 to 30 minutes in preheated oven. Check for doneness of rice around the 20 minute mark.
Remove from oven and add steamed broccoli and pour in a greased casserole dish if desired.
Top with breadcrumbs mixture and place under broiler for 2 to 4 minutes until brown. allow to cool. Serve and enjoy.
