– Uncooked, riced cauliflower –Chopped tomatoes – Chopped arugula – Salt & Pepper – Reduced fat Italian dressing – Feta Cheese, optional

INGREDIENTS

Prep tomatoes and arugula.

STEP 1

Add tomatoes, arugula and riced cauliflower to a large bowl.

STEP 2

Season with salt and pepper. Mix well.

STEP 3

1. Add dressing, mix well and top with crumbled feta cheese.
