BBQ Pork Stuffed Sweet Potatoes is a tasty way to spruce up that baked sweet potato. We use lean Pork tenderloin seasoned and pulled to perfection and add in some really great toppings to make it a delicious meal.

Ingredients

  • 4 medium cooked sweet potatoes
  • 4 cups cooked pulled pork
  • 1 cup sugar free BBQ sauce
  • 2 tablespoons butter
  • ¾ teaspoon Salt
  • 1.5 teaspoon pepper
  • 1 Cup sour cream
  • 1 cup shredded low fat cheddar cheese
  • chopped green onions for garnish

Instructions

  • Cut potatoes open and add a bit of butter, salt and pepper.
  • Top with equal portions of pulled pork, cheese, Sour cream, onions and BBQ Sauce.
  • Serve warm and enjoy!
