Ingredients

  • 2 cups cooked mashed sweet potatoes
  • 1 & ¼ cup sugar optional
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • ½ cup melted unsalted butter
  • 14 oz can of sweetened condensed milk
  • 2 eggs
  • 2 teaspoons vanilla
  • Pie Crust
  • Pinch of salt

Instructions

  • Preheat oven to 350 degrees F. Mix potatoes, sugar, nutmeg, cinnamon, butter, sweetened condensed milk, eggs and vanilla in a large bowl. Use the hand mixer to get it nice and smooth. Run through a siv if you want to make even smoother.
  • Pour pie mixture into an unbaked pie crust. This recipe will make one whole deep dish or you can make two shallow dish pies. You can find a great recipe for one HERE.
  • Tent edges of pie with a ribbon of tinfoil. Carefully placed in preheated oven and bake for 40-50 minutes until pie is set. You can remove the foil tent the last 10-15 min of baking to make sure edges are brown.
  • Cool and serve with whipped cream. Store in refrigerator. Enjoy!
