How to make Shrimp Creole Casserole

1 & 1/2 cup uncooked brown rice.

1 teaspoon canola oil

1 pound peeled, deveined, tail off raw shrimp.

2 Tablespoons Butter

1 can cream of mushroom soup and 8 oz sour cream

2 teaspoons creole seasoning and 1 cup shredded cheddar.

4 oz sliced mushrooms

Cook Rice

Cook Rice according to package directions. Spread in even layer on bottom of pan

Saute Shrimp

Saute shrimp in 1 teaspoon Olive oil, just until Pink. Drain and set aside

Saute Mushrooms

Sauce Mushrooms in 2 Tablespoons of butter until soft and brown.

Add Cream Base

Add Cream of mushroom soup and sour cream to mushrooms.

Add Shrimp 

Add Shrimp back in to mushrooms and sauce. Season with 2 teaspoons of creole seasoning and heat through.

Pour over  Rice

Pour over bed of prepared rice and top with 1 cup of grated cheddar cheese.

Cover and Bake

Cover tightly with foil and cook for 20-25 minutes at 350.

Uncover and bake 5 minutes more until bubbly and slightly brown
