PECAN PIE SQUARES
Pecan Pie Squares, made with a real shortbread crust, are a delicious alternative to the famed Southern Pecan Pie.
Made with honey and whipping cream, these pecan pie bars are the best you will find.
All Purpose Flour
For the Shortbread Crust
Preheat the oven to 350 degrees. Spray a 9 x 13 casserole dish lightly with cooking spray. In a large bowl, sift your flour and powdered sugar.
Add ¾ cup cold cubed butter and cut in using a pastry cutter or your hands. Cut in butter until the dough looks coarse.
Gently pat the mixture into the 9 x 13 pan on the bottom and up the sides to create the crust. Bake for 15-20 minutes until the crust is slightly brown. Remove from oven and allow to cool.
For the Pecan Pie Squares
In a boiler, combine ⅔ cup butter, honey, brown sugar, and whipping cream. Melt and mix over medium heat just until combined and the sugar has dissolved.
Stir in the pecans and mix well. Pour into the prepared crust and bake for 25 to 30 minutes, until browned and bubbly. Allow to cool completely prior to cutting into squares.
