MINI SKINNY BANANA PUDDING

Mini Skinny Banana Pudding is a light and delicious way to get your southern banana pudding fix.

Dressed with toasted almonds, it is the perfect healthy substitute.

INGREDIENTS

Almonds Cornstarch Egg yolk Low fat milk Bananas

Preheat the oven to 350°. Roast chopped almonds for 10–12 minutes. Cool.

In a saucepan, combine salt, sugar substitute, and corn starch. Mix well.

Add in the egg yolk. Set the heat to medium and slowly add milk. Stir well to combine. Continue to stir until it reaches a custard or pudding consistency.

Remove from heat and stir in vanilla.

Layer custard in  single-serving dishes with sliced bananas. Top with roasted almonds.
