INGREDIENTS

Season Beef with smoked paprika, salt and pepper. Sear in a skillet for 2-5 minutes until slightly browned on all sides.

STEP 1

Add cleaned and trimmed radishes and cubed pumpkin that have been cut to be all about the same size. Add in mushrooms and chopped onions. Mix to combine.

Add tomato paste, red wine vinegar, thyme and garlic and mix well to season.

Pour in broth and add the bay leaf.

Step 5

Place in sleeve of crock pot, cover with lid and cook on low for 8 hours or high for 4-5 hours, until beef is tender and almost falling apart.

Step 6

Garnish with parsley, more thyme and salt and pepper if need be.

Certainly! Other cuts of beef that would work very well are cubed chuck roast and chuck eye. Lamb or even Chicken cubed would also be very good!
