Spaghetti Squash Gratin

Spaghetti Squash Gratin is a delicious way to use the veggie that doubles as a pasta. This low carb, Keto side dish is so good you won’t know you are missing those carbs.

We use roasted spaghetti squash with greek yogurt, mozzarella and parmesan cheeses to make this carb friendly au gratin side dish.

How to Cut and cook Spaghetti Squash

We cover this over in our other post, HOW TO ROAST SPAGHETTI SQUASH but here is the short version.

One of the many challenges with the larger varieties of squash is cutting them to remove the seeds and cook.

With tough skin and large size, cutting them is not for the faint of heart.

Luckily, I have a trick that will help. Pop that squash in the microwave from 2-4 minutes. Carefully remove it ( it will be hot!) and it should slice easily.

We preheat our oven to 400 degrees and roast in two halves on a parchment lined sheet pan.

We remove the seeds and prep the squash as you will see below, turn them cut side down and cook. Easy as can be.

How to Make Spaghetti Squash Gratin

This recipe is an easy one bowl mix and go! We keep it low carb and low fuss!

Ingredients

  • 3 cups Spaghetti Squash cooked and separated
  • 2 eggs
  • 1 cup Mozzarella Cheese shredded
  • 1/2 cup Plain Greek Yogurt
  • 2 tbsp Minced Garlic
  • 1/2 tsp dried thyme
  • Salt to taste
  • Pepper to taste
  • 1/2 cup Parmesan Cheese grated

Method

  1. Preheat oven to 400.
  2. In a large bowl, mix prepared, cooled squash with eggs, cheese and greek yogurt. Mixing well.
  3. Season with salt, pepper, garlic and thyme. Mix well.
  4. Pour in a lightly greased casserole dish. Top with parmesan cheese.
  5. Bake for 30 minutes, until top is slightly browned. Allow to rest for 10 minutes.
  6. Serve and enjoy!

Tips and Tricks

Is Spaghetti Squash Au Gratin Low Carb?

Spaghetti squash is a low glycemic vegetables and we do make it low carb by using low fat cheeses as well as plain Greek yogurt as a good source of lean protein.

What does Au Gratin mean?

Au gratin simply means covered with bread crumbs and cheese and browned on top. We substitute bread crumbs with the dry parmesan cheese to give the same texture.

Why is my spaghetti squash watery?

You probably over salted it. Too much salt can cause the squash to weep. We recommend just placing it in a strainer and allowing it to drain a bit before preparing further.

Is this Spaghetti Squash Casserole?

In a way, yes. A casserole is any dish cooked in one pan that is cooked slowly in the oven. And this is all of those things. No matter the name, Au Gratin or Casserole, the end result is still Delicious.

What goes well with Spaghetti Squash Gratin?

Lean Chicken, Fish or even Turkey are good choices. This is a great side dish to accompany almost any good protein. We have taken the liberty of suggesting some healthier options below.

Ingredients

  • 3 cups Spaghetti Squash cooked and seperated
  • 2 eggs
  • 1 cup Mozzarella Cheese shredded
  • 1/2 cup Plain Greek Yogurt
  • 2 tbsp Minced Garlic
  • 1/2 tsp dried thyme
  • Salt to taste
