How to Make It

~ Ingredients ~
- 1/4 cup almonds, chopped
- 2 Tablespoons cornstarch
- 1/4 Teaspoon salt
- 4 Tablespoons sugar substitute
- 1 egg yolk, lightly beaten
- 1 cup low fat milk
- 1 teaspoon vanilla
- 3 sliced bananas
~ Method ~
The method by which we make the pudding is virtually the same as our TRADITIONAL BANANA PUDDING. The cast of characters just looks a bit different.
Preheat oven to 350. Roast 10-12 minutes. Cool and chop.
Slice bananas to desired size.
In a saucepan combine salt, sugar substitute and corn starch. Mix well.
Add in egg yolk. Set heat to medium and slowly add milk. stir well to combine.
Continue to stir until it reaches a custard or pudding consistency.
Want to save this recipe?
Remove from heat and stir in vanilla.
To assemble:
Layer in single serving dishes with sliced bananas two or three layers ending with sliced bananas. Top with roasted almonds.
Tips and Tricks
More than likely, your heat isn’t high enough. Don’t be scared here. As long as you stay with it, stirring, it shouldn’t scald. At medium to high heat, this should only take a few minutes.
Yes, the recipe as written will only make a small pan. So for larger pans, double the recipe.
Yes! Any roasted nut should work. If you are concerned with an nut allergy a good alternative is low fat graham cracker bits.
