Tips and Tricks

Why isn’t my pudding setting up?

More than likely, your heat isn’t high enough. Don’t be scared here. As long as you stay with it, stirring, it shouldn’t scald. At medium to high heat, this should only take a few minutes.

Can I make this in a pan instead of individual servings?

Yes, the recipe as written will only make a small pan. So for larger pans, double the recipe.

Can I use another nut other than almonds?

Yes! Any roasted nut should work. If you are concerned with an nut allergy a good alternative is low fat graham cracker bits.
