Recipes That Make You Fall in Love or Famous!
I know many of you laughed at that heading. Both are true for me though. This is a recipe I developed when Big D and I were dating almost 3 decades ago. I honestly think it and my GRILLED HAWAIIAN BACON AND CHICKEN are the reasons he fell in love with me. It could have also been my stellar conversations skills. I suspect it was because I cooked for him, often.
Nonetheless, over the years, I have also become pretty famous for these potatoes too. Most cooks have a list of recipes that are highly guarded and revered by those that love for them to be at a social function. I think I have a few in every category. I love to cook and love to share that food even more. Recipes like this can also become heirloom recipes. Both of my girls love to make these potatoes as much as my SPICY PIMENTO CHEESE. Want to see if I can really back all of this big talk up?
How to Make Them
A mashed potato recipe is just a mashed potato recipe unless you take the opportunity to add some really great ingredients to make it into something fabulous. Here, we show you how to do just that. For another tasty spin on the potato side dish, check out my friend Mandy’s recipe for SMASHED POTATOES.
~Ingredients
- 2 pounds potatoes, peeled, cubed and boiled to mash. – we like using Irish or white potatoes for this.
- 3 Tablespoons Butter – to add a smooth and silky flavor to the potatoes.
- 8 ounces cream cheese – the mother of all southern additions.
- 8 ounces sour cream – it just goes with potatoes!
- 2 teaspoons garlic powder – to give them more than just a potato flavor.
- I teaspoon salt – more or less according to your needs or tastes.
- 1/2 teaspoon pepper – same as above, we like a good bit, but do according to your preference.
- Dried Parsley for garnish – a pop of color makes them very pretty.
~Method
- Preheat oven to 350. Peel, cube and boil potatoes and drain.
- Add to a large bowl and mash.
- Add butter, cream cheese, sour cream, salt, pepper and garlic powder. Mix well.
- Pour in a greased 9×13 casserole dish. Bake 20-25 minutes. Remove from oven, garnish with parsley and serve.

Tips and Tricks
A few substitutes can be used for a healthier version. Use cooked, riced or mashed cauliflower in place of potatoes. Add in half of the amounts of cream cheese, sour cream and butter, using low fat versions of cream cheese and sour cream. Also lessening the salt content will help as well.
Yes. I would prep ahead of time and freeze before the baking process. Set on the counter to thaw a few hours before needed and cook according to directions.
No but it will help the cream cheese and sour cream melt into the potatoes. This makes it more cohesive in texture and gives the potatoes a twice baked feel.
