Baked Shrimp that is as good as Fried!

Life can be busy. It is so easy to get bogged down in the rut of cooking and going to work and school and all of the places we have to be. It is easy to sometimes look at cooking as a chore. Especially during busy weeks its hard to have inspiration to cook much less to cook something really delicious.

This Crunchy Oven Baked Shrimp can be the recipe to pull you right out of the hum drums of a cooking slump. Toasty bread crumbs coupled with parmesan cheese, lemon juice, butter and onion come together to feature flavors that only enhance our favorite summer seafood.

How to make It!

Y’all know I love a one pan supper. Having an easy clean up is almost as important as having a great meal. Lol, not really. Well, yes, ok it is. Let’s just be honest. I love to cook but hate the clean up. Years ago I tried the “I cooked, you clean up” philosophy. Ask me how well that worked out. <insert rolling eyes>

Truthfully, having very little to clean up does make life a whole lot easier, especially when you are talking about a week night meal. I love doing this main dish in my trusty cast iron skillet because it only adds to the flavor of the shrimp by cooking it.

I tell you what, you. mix up a mess of our Southern Coleslaw and make this entree on a Tuesday night and your family will think you are a chef at a 4 star southern restaurant! Let’s show you how to do it!

~Ingredients~

  • 1 pound of peeled, deveined with or without tails on Shrimp
  • 1/2 cup minced onion
  • 2 tablespoons Lemon Juice
  • 1 teaspoon salt
  • 2 tablespoons Chicken Broth
  • 1 teaspoon pepper
  • 2 tablespoons minced garlic
  • 1/2 cup melted butter, divided
  • lemon wedges
  • 1/3 Panko Bread crumbs
  • 2 tablespoons grated parmesan cheese
  • parsley for garnish
  • 1/4 teaspoon red pepper flakes

~Method~

  1. Preheat oven to 425 degrees Fahrenheit. In a 10 inch oven proof skillet place shrimp(thawed if using frozen) in a single layer. Drizzle in lemon juice, 2 tablespoon of the melted butter and chicken broth. Sprinkle with minced onion, salt and pepper.
  2. In a medium bowl, mix remainder of melted butter, Panko Bread crumbs, minced garlic, parsley, parmesan cheese and red pepper flakes. Sprinkle bread crumb mixture over shrimp covering each one.
  3. Bake in oven 10-15 minutes until hot and bubbly. Optional: Broil for one minute or so to add a little extra brown to the breadcrumbs.
  4. Garnish with more parsley and lemon wedges and Enjoy!

Tips and Tricks

  • Shrimp – Y’all know I always say fresh is best but seriously if you can’t get it, get some good Jumbo shrimp in the frozen section of your market and make this up! It really is just as good. The seasoning does its job and makes this baked shrimp oh so good!
  • Skillet – If you don’t have you a good Cast iron skillet, get one ASAP! They are so versatile and only get better with each meal you make in it. There aren’t many skillets that can stand up to so much. Stove top, oven, grill, open fire. There isn’t anything these guys can’t do. If you want a great one, go to our link at the bottom of this post and get one through our affiliate link at Amazon.
  • Broil – to broil or not to broil. If you have cooking ADD, skip this step. The broil function is NOT one you can set to and walk away from. Take a minute to stay put and watch the magic happen right before your eyes. But make sure you don’t take those eyes off of what is going on under that broiler! There is no quicker way to ruin supper! lol
