Most all of the soups we specialize in here at The Buttered Home are Roux Based but we love to keep things simple too.

Making soup in the Crock pot makes my life so much easier. Having a hearty meal waiting for my folks when we get home saves us time and allows us to sit down together sooner.

This Chicken Tortilla soup is a light and filling soup that is good in the Winter and Summer.

There is virtually no prep work to this soup at all. Using raw chicken breast, canned produce and some fresh, you will spend about 5 minutes chopping and prepping for this one.

Tips and Tricks

Can I use Beef or other protein?

Yes! I have used pork loin as well as beef chuck eye steak here. Our recipes are a jumping off point to get you started. Get creative!

How do I store it?

Once the soup comes to room temperature, store in an airtight container for up to a week in the refrigerator. Reheat in a boiler on top of the stove.

Can I freeze it?

Yes! I like to prep and freeze before cooking as a meal prep option. So when I need supper, I thaw the night before, pop it in the crock pot the next morning and I have supper ready when I need it.
