Candied Sweet Potato Bites
Candied Sweet Potato Bites take a beloved holiday favorite recipe and simplifies it as well as makes it a little fancy. This recipe is so simple taking sweet potato wedges and cooking them and topping them with a delicious sauce. All dressed up.
Classics Made New
It is no secret that I love sweet potatoes. Mash em, roast em, use them in a cake. You name it, I do believe it is the perfect food. Their nutritional value as well as natural sweetness offer a palate pleasing taste to any side dish you make with them. My Momma makes the best Sweet Potato casserole, hands down. Like many of her other recipes, I have tried to make it and it’s just not as good.
In doing my normal Thanksgiving research, I have seen so many sweet potato recipes that highlight the use of the whole potato. That got me thinking about my love for the roasted sweet potato, one of the ways I love to do them is in the traditional SWEET POTATO CASSEROLE. Now for Turkey day, we love this casserole that is almost a dessert in itself. So I thought, I can roast them but instead of a savory element, I can roast them with sweet! We also like to mix the holidays up and sometimes have small bites so cutting these into wedges made them a perfect hand held option.
How to Make Them
This recipe is almost too easy. While it really doesn’t need to be prepared ahead of time, you certainly could cook the potatoes and allow them to heat up just a bit before you top them. This will take all of the guesswork out of your sweet potato side for holidays or any old day of the week.
~Ingredients
- 4 medium sweet potatoes, peeled and sliced into discs
- 2 tbsp maple syrup
- 2 tbsp butter, melted
- 1 tbsp brown sugar
- candied pecan halves
- cinnamon for garnish
- whipped cream
- pinch of salt
~Method
- Preheat the oven to 400 degrees. Peel and slice potatoes into wedges.
- Line a baking sheet with wax or parchment paper and place potatoes on the baking sheet.
- Melt butter and mix with maple syrup and brown sugar. Glaze the sweet potatoes with the mixture, turn over and do the other side.
- Bake for 10 minutes, remove from oven and carefully turn over and glaze tops again. Return to oven for another 15 minutes. In order to keep them from sticking, move them to a serving platter while still hot.
- Sprinkle with just a pinch of salt. Allow to cool slightly and top with a dollop of whipped cream and a candied pecan. Sprinkle or use a grater to add just a touch of cinnamon for garnish on top of the whipped cream.
**NOTE: The candied pecans recipe will be here next month but if you need them beforehand, several stores have them in stock. Also, you can always mix some chopped pecans with a little brown sugar and butter like you would for a topping for a crumb cake and that will work just as well.
Tips and Tricks
Sweet potatoes, while higher glycemic, are healthy for you in moderation. One way to make this healthier is to substitute the brown sugar and maple syrup with sugar free options. Also using a sugar free whipped topping is always a good idea.
Yes, use what you have on hand! That is always the best ingredient. Some really great recipes have been born from innovation from the pantry!
I like to use the fist test. Getting ones the size of my fist means a good medium size potato. It also means that it will be safer to handle, peel and cut.
