Baked BLT Avocados
Baked BLT Avocados give a new meaning to fresh. Avocados baked in the oven and filled with bacon, lettuce and tomato give way to a new classic BLT.
Baked BLT Avocados
I love a good BLT sandwich but let’s be honest, when we are trying to eat a tad better, we have to be creative. Taking the bread out of the equation, there are only so many ways a BLT is any good. But do I have a surprise for you! We get creative and use the freshness of Avocado to add to that BLT mixture and combine it with a baked base that results in a buttery smooth goodness.
Roasting vegetables is one of my favorite past times in the kitchen. I love making good things great. Like these Roasted Brussel Sprouts. Roasting veggies gives them a new purpose and sweetness you just won’t find any other way. Roasting avocados is a great way to add some warmth to the salad based delight while showcasing just how versatile the flesh of the avocado can be.
How to make Baked BLT Avocados
Just taking about 10 to 20 minutes, you will actually spend more time frying your bacon for this gem. A fresh meal aside from the baked avocados and bacon, you can whip this one up in a snap. Here is how you do it.
~ Ingredients ~
- 2 large avocados, halved and seeded
- 1/2 cup grape tomatoes halved
- 1 teaspoon lime juice
- 1/2 cup green leaf lettuce, chopped
- 4 strips of bacon, cooked and crumbled1/4 teaspoon garlic powder
- 1/2 teaspoon salt, divided
- 1/8 teaspoon pepper
- 1 tablespoon olive oil
~ Method ~
- Preheat oven to 350 degrees Fahrenheit. Carefully cut the avocados in half and remove the seed. With a spoon, scoop out half of the flesh of the avocados and place in a bow. Drizzle avocado boats with olive oil and sprinkle with 1/4 teaspoon of the salt. Bake for 10-20 minutes until remaining flesh is soft and browned.
- In a separate bowl, mix the scooped avocado with bacon, tomatoes, lettuce, remaining salt, garlic, pepper and lime juice.
- When avocados are done. Spoon BLT mixture into each avocado boat. Enjoy!
